Freeze dried blueberries

Freeze drying—technically known as lyophilisation, or cryodesiccation is a dehydration process typically used to preserve a perishable material or make the material more convenient for transport. A freeze dried fruit is a dehydrated fruit derived from lyophilisation which can be stored for longer duration and can be consumed throughout the year.

Process of freeze drying is practically done in three main phases:
• Freezing, or sub-cooling of product below its eutectic point (cca. -30°C and lower);
• Dehydration (drying) by ice sublimation under vacuum; and
• Completion of product drying up to moisture content lower than 3% by the normal vacuum drying.

Traditionally, freeze-drying is performed at vacuum (vacuum freeze-drying, VFD), resulting in extensive drying periods with high operating costs. In order to shorten this period, alternative processes can be used, such as atmospheric freeze-drying (AFD), where the primary drying stage (sublimation) occurs at atmospheric pressure. AFD has been used successfully for drying of berries. Traditional freeze drying (lyophilisation) is used to quick freeze and vacuum moisture from a blueberry. This gets the blueberry to a 2 % moisture level where it is crunchy.

The freeze dry blueberry maintains all of the nutrients of the blueberry minus the water and an intense blueberry flavor. According to one study, freeze drying resulted in a higher retention of total polyphenols and anthocyanins as well as higher antioxidant activity in the glycoside forms. Lingonberry or cowberry

The lingonberry, also known as the cowberry, fox berry, mountain cranberry, partridgeberry and red whortleberry, is a small evergreen shrub of the Ericaceae family, which grows wild in the mountainous regions of Scandinavia, Russia, Canada and in the United States - Maine.

Lingonberries are circumboreal woody dwarf to low growing, rhizomatous, evergreen shrubs. Lingonberry leaves are thick and leathery, elliptic to obovate, slightly revolute, glossy bright green above, pale and glandular below with entire margins.

Although lingonberry has been considered among the most important of the fruit jellies, no evidence exist about its importance in the diet of earlier times.

Lingonberry has been important as a supplier of energy and vitamins. Lingonberry fruit differs from most of the other wild berry species owing to its long term storage potential. Lingonberry is a food native to Scandinavia.

Lingonberry has shown antioxidant and anti-inflammatory effects in laboratory studies. The fruits have been described as ‘shaped like blueberries but acid like cranberries’. They are pleasantly tart and aromatic, but may be bitter, especially when unripe.

Lingonberry fruit contains large amounts of aroma compounds and anthocyanins, negligible amounts of proteins and only small amounts of minerals, although lingonberry fruit provides 4 mg vitamin C, 0.02 mg carotene, and 67 kcal of energy per 100 g.

In Sweden, lingonberry has been used as a food and as a traditional medicine to treat inflammatory disease and wounds.

Canned blueberries

More than half of the processed berries are frozen and the rest are canned. Canned blueberries can be light or heavy syrup packed or water packed.

For this fresh or frozen blueberries are spaced in cans, light syrup or water is added to cover the head space and cans are sealed and heat processed at about 93 – 95 °C with 25-30 minute holding time.

Canned blueberries may vary from a highly attractive, free flowing product to one that is clumped into a firm mass. Clumping can be greatly reduced by cooling with agitation, which apparently interferes with binding together of berries by surface wax or cutin.

Canned blueberries packed in water are low in calories and carbohydrates. While canned blueberries packed in heavy syrup contain about two and one-half times the calories and carbohydrates that are represent in canned berries packed in water alone.

Compared with other fruits, canned blueberries are an excellent source of iron, a fair source of vitamin A, about average in protein, fat, carbohydrate, and calcium and low in phosphorus.

For centuries, blueberries have been esteemed in folklore, both as foods and as medicines. Native Americans consumed the leaves, roots, and fruits of high bush blueberries to cure certain aliments.

Ten years ago, Japanese researchers demonstrated the usefulness of blueberries in improving weak eyesight and lessening eye fatigue. Majority of Japanese people were aware of the eyesight benefits derived form blueberry consumption.

Europeans have long consumed bilberries, a variety of blueberries, as part of their diet, especially for eye health. A pigment in bilberries contains anthocyanins, the potent antioxidants that are thought to contribute to eye health. During World War II, pilots in the Royal Air Force ate bilberries. The pilot found that the blueberries helped their night vision when they conducted nighttime bombings.

The wild variety of blueberries harvested commercially in Maine and eastern Canada showed the greatest amount of antioxidant activity. Those berries are smaller than cultivated ones. The flavor of the wild berries was found to be more intense, and the nutrient content wild blueberries (without added sugar) matched the nutrient content of fresh blueberries.

Investigations of blueberry to eye health have found that blueberry consumption increase circulation of the capillaries of the eyes, which reduces oxidation in these tissues, this action benefits eyesight. It is thought to be especially helpful in preventing diabetic retinopathy, as well as night blindness, macular degeneration and cataracts.

Constituents in blueberries also are thought to strengthen all other capillaries, arteries, and veins and to reduce capillary fragility and permeability in conditions such as varicose veins. Also, it is thought that blueberries inhibit enzymes that may promote cancer; reduce histamine production and act as anti-inflammatory nutrient to connective tissue.
