Frozen blueberry

Quick frozen blueberries are the product subjected to a freezing process in appropriate equipment and complying with the conditions laid down hereafter. The quick frozen method is used since it preserves the cell structure, texture, color, flavor and aroma of the berries best.

The usual procedure is to freeze the cleaned and inspected berries trays that are placed on racks and move through a cold-air tunnel. This freezing operation shall be carried out in such a way that the range of temperature of maximum crystallization is passed quickly.

The quick-freezing process shall not be regarded as complete unless and until the product temperature has reached 18°C (0°F) at the thermal centre after thermal stabilization.

Frozen blueberries can be thawed in the refrigerator or they can be thawed during cooking.

Frozen blueberries are generally used in the production of pastries, and jam. Frozen blueberries also use in baked fruit desserts like breads, cobblers, muffins, or pies. Some are packed in retail-sized plastic pouches and sold as such as retail.

Frozen blueberries are a great addition to fruit salads and smoothies. Frozen berry fruits are generally consumed as they are, whole and without peeling or cutting, as the conservation of their original shape and appearance is often desired for the final product.
